Win Win Bali: New York-Inspired Dining in Berawa

Berawa’s dining scene has a new arrival with the opening of Win Win, a restaurant bringing the spirit of 1990s New York to Bali’s coast. Located at Etta The Place Brawa, the venue combines nostalgic American dishes, customisable martinis and thoughtfully designed interiors. Set along a quieter road in Berawa, where the street curves towards the beach, Win Win puts neighbourhood hospitality at the centre of its experience. The restaurant is the first part of a larger hospitality destination created by Gibran Baydoun, founder of BYGB Studio and That’s Proper Hospitality Group.

Etta The Place Brawa will bring together dining, coffee, nightlife and accommodation. Its 15 individually designed rooms are scheduled to open in November 2026. For now, Win Win sets the tone with an inviting restaurant that welcomes local residents, holidaymakers and visitors looking for something beyond Bali’s familiar beach clubs.

A Taste of New York in Coastal Bali

Win Win takes inspiration from the neighbourhood restaurants and luncheonettes of 1990s New York. Its approach combines familiar comfort food with seafood, classic cocktails and a menu designed for sharing. Executive Chef Ashlee Malligan, whose experience includes Bacchanalia and Restaurant Nouri in Singapore, leads the kitchen. Her menu balances playful nostalgia with careful preparation and well-considered ingredients.

The meal begins with warm Parker House rolls finished with brown butter crumb, buttermilk-fried olives with aerated ranch, and a pickle served alongside pickleback shooters. Another playful starter pairs chips and dip with Yarra Valley trout roe. Seafood lovers can choose from hamachi cones with avocado, jumbo shrimp cocktail and Oysters Rockefeller. These dishes bring a classic American restaurant feel to Bali’s relaxed dining culture.

For the main course, options range from ricotta-filled cacio e pepe ravioli and spicy vodka rigatoni to dry-aged duck breast with charred romaine. Bulgogi-glazed spatchcock chicken and grilled white snapper offer further choices. Dessert continues the nostalgic theme. Ruth Etta’s favourite pecan pie provides a classic finish, while warm chocolate chip cookies arrive with an egg cream soda float. The menu is varied enough for a relaxed dinner with friends or a longer evening built around several courses. Familiar flavours and a little humour give the restaurant its distinctive character.

Martinis Made to Your Taste

Drinks play a central role at Win Win, particularly its collection of crisp, ice-cold cocktails and martinis. Rather than simply choosing from a fixed list, guests can create their own martini. Each receives a small notepad and pencil to select preferred spirits, ratios and garnishes.

This interactive approach gives diners control over the final drink, whether they prefer a particularly dry martini or something with a different balance. The bar also serves cold classics inspired by New York’s cocktail culture. Wine is equally approachable. A wall of wine refrigerators is organised by price tier, making it easier for guests to choose a bottle according to their preferences and budget.

The emphasis is on good drinks without unnecessary formality. It suits the restaurant’s broader personality, where thoughtful details meet an easygoing atmosphere.

Interiors Inspired by Film and Family History

Designed by Baydoun, Win Win’s interiors draw inspiration from 1990s cinema and his grandmother’s townhouse in Detroit. The property was reportedly purchased from a member of The Four Tops, adding another layer to its personal design story. Inside, smooth stainless-steel dining tables contrast with mint-green flatware and custom white ceramic plates. Built-in corduroy booths soften the space, while geometric acoustic speakers contribute to its distinctive character.

The design also incorporates pieces from Indonesian makers, vintage local fabrics and Nusa Penida handwoven upholstery. Custom furniture comes from STVMP, Mahardika Design, Foolniture and Bothwell. Staff uniforms are designed by Alami Studio, while Sungai Design creates pressed tiles and bar flooring using recovered river plastic. These details connect the restaurant’s international influences with local craftsmanship and environmental initiatives. As evening approaches, long tapered candles illuminate the tables and white linen. The result recalls coastal destinations such as Malibu and Montauk, while retaining a connection to Bali.

More Than a Restaurant at Etta The Place Brawa

Win Win forms the central dining room of Etta The Place Brawa, a developing hospitality destination with several additional concepts. Legacy Fine Roasters & Creamery serves American-style coffee through a street-facing glass-block window. Soft serve topped with sprinkles adds a simple, nostalgic treat.

Palace Disco brings music and late-night energy to the development. Inspired by Singapore’s Corduroy Palace, the venue centres on vinyl records, cassette tapes, cocktails and dancing. Above the property, Chez Kiki introduces a poolside rooftop setting overlooking Berawa Beach. Its planned offering includes agave slushies, rosé, beachside tostadas and spritzes, with colourful tiles and checkerboard details shaping the atmosphere.

Blondies is also scheduled to debut in late 2026. The intimate, 15-seat kitchen counter will feature a tasting menu led by Chef Malligan, with an emphasis on technique, seasonal ingredients and house fermentations. Together, these venues aim to create a place for different occasions, from morning coffee to dinner, cocktails and late-night music.

Boutique Rooms Opening in November

Etta The Place Brawa’s 15 individually designed rooms are scheduled to open in November 2026. Their concept favours personal touches and analogue comforts over a screen-led experience. Each room is named after a mother known to the team. Built-in corduroy diner booths, vintage-style radios and carefully selected books reinforce the intimate, residential feel.

Guests can expect private full bars, customised complimentary minibars, pillow and water menus, and additional personal touches. These include hallway perfume dispensers, face masks and a silver martini trolley service at 6pm. Televisions will be available for movie nights on request rather than serving as a standard room feature. The approach reflects the development’s focus on conversation, comfort and human connection.

A Commitment to Bali’s Community

Community support forms part of Etta The Place Brawa’s operating philosophy. One per cent of quarterly revenue is allocated to local causes, including Sungai Watch, a Dalung orphanage and environmental groups. Recovered plastic from Bali’s waterways is repurposed into custom-pressed tiles. The project also supports local makers through hand-tailored uniforms created by Indonesian mothers. Staff wellbeing receives attention too. Team members receive quarterly bonuses of IDR 500,000 for personal community causes, alongside Just Because Leave for important life events. These initiatives give the project a local dimension beyond its dining and accommodation offerings.

Visiting Win Win in Berawa

Win Win is located on Jalan Pemelisan Agung in Tibubeneng, North Kuta, Bali. Its restaurant is now open, while the 15 accommodation rooms are scheduled to follow in November 2026. For travellers exploring Berawa, the venue offers an alternative to the area’s beach clubs, with nostalgic American food, personalised martinis and interiors shaped by family history and Indonesian craftsmanship. As part of Etta The Place Brawa, Win Win is also the first step in a broader destination designed to bring dining, coffee, nightlife and accommodation together.
